FOOD PRESERVATION
Methodology
Our cuisine is rooted in artisanal preservation practices. Techniques of curing, hot and cold smoking, pickling, culturing, and fermenting are staple processes of the food we serve. Chef Jonathan is a culinary artist, who draws out complex flavors and creative combinations while maintaining the integrity of each ingredient.
Made from Scratch
We craft as much as possible from scratch. The technique that takes the most knowledge and point of view is curing. Our charcuterie boards offer a vast array of cuts and offer distinctive old world flavors.
Sumptuous Desserts
Our dessert department is sure to delight your sweet tooth. From the classic comfort of a chocolate chip cookie with a spark of sea salt, to the luscious layers of our pot de créme, to the sharp tang of our raspberry lemonade bars, our tantalizing offerings will bring all your senses to life.

Florals & Found Objects
Our look and feel is an inspiring and integrated table landscape. We consider the architectural design of our installations and weave them with wild botanicals, and flowers and our collection of natural found objects, rocks, moss, wood, slate, ceramics, and iron.

THEATRICAL EXPERIENCE
Cirque du Soleil
Opening Night Receptions performed in San Francisco.
Vau de Vire Society
The Soiled Dove, an immersive dinner theater of burlesque and acrobatics telling the famed story of San Francisco’s Barbary Coast.
ENGAGING INSTALLATIONS
The Sake Make River
A series of slates undulating with an array of maki rolls, stunning vegetables and delicious dips. Weaving through the food is a menagerie of rock, moss and pebbles leading to a stream of flowing chilled sake.
IMMERSIVE CONCEPTS
Yoko Ono Event - SFMOMA
Guests participated in creating a vertical art installation by taking a scallop skewered with a nail. When finished with the scallop, they placed the nail on a mobile human canvas.
